    “I’ve labored to be a greater chief and Noma has taken massive steps to rework the tradition over a few years. I acknowledge these modifications don’t restore the previous,” Redzepi stated.

    He added that “an apology just isn’t sufficient; I take accountability for my very own actions.”

    Redzepi has beforehand admitted to dropping his cool, together with in 2015, when he stated in an essay that “I have been a bully for a big a part of my profession”.

    In February, former head of Noma’s fermentation lab, Jason Ignacio White, began posting about abuse he had witnessed whereas working at Noma and relayed tales despatched to him by different former workers.

    “Noma just isn’t a narrative of innovation. It’s a story of a maniac that will breed tradition of concern, abuse & exploitation,” White stated in an Instagram publish in early February.

    An acronym fashioned from the Danish phrases “nordisk” (Nordic) and “mad” (meals), Noma first opened on a quay in central Copenhagen in 2003.

    It closed in 2016 and reopened two years later in a barely extra distant neighbourhood of the Danish capital.

    On Wednesday, Noma opened a pop-up restaurant in Los Angeles, however the opening was marked by a protest led by former workers.
